The secret sauce, so to speak, is a mix of honey, umami-rich soy sauce, and a kick of chili-garlic sauce. This sweet, spicy mixture deliciously coats shrimp and tender rice noodles for a delightful, Asian-inspired dish. The saucy noodles and shrimp are accompanied by meaty shiitake mushrooms and crisp ribbons of bok choy. Add more veggies if you have them; the more the merrier! It doesn't get much better—or easier—than this dinner packed with veggies, protein, and a whole lot of flavor. Ingredients ¼ cup honey 2 tablespoons rice vinegar 2 tablespoons soy sauce 1 tablespoon Asian chili-garlic sauce 1½ teaspoons grated garlic (from 3 cloves) 1 teaspoon cornstarch 3 tablespoons canola oil, divided 1 (5-oz.) package sliced fresh shiitake mushrooms (3 cups) 3 heads baby bok choy, sliced (4 cups) 1 pound peeled, deveined, extra-large raw shrimp, patted dry 1 (8-oz.) package rice stick noodles, soaked according to package directions Directions Whisk honey, vinegar, soy sauce, chili-garlic sauce, garlic, and cornstarch in a small bowl, and set aside. Heat 2 tablespoons oil in a large non-stick skillet over medium-high. Add mushrooms and cook, stirring occasionally, until lightly browned, about 6 minutes. Add bok choy and cook, stirring often, until crisp-tender, about 3 minutes. Transfer the mushroom mixture to a medium bowl and set aside. Heat the remaining 1 tablespoon oil over medium-high. Add shrimp and cook, flipping occasionally, until just opaque in centers, 2 to 3 minutes. Add the honey mixture and soaked, drained noodles to the skillet. Cook, stirring constantly, until the sauce is thickened and coats the noodles, about 2 minutes. Remove from heat, stir in the mushroom mixture, and serve.
