When one has a toddler that is extremely fussy and then also decides that he will only eat certain finger foods, us moms tend to get creative.
Here is a pancake recipe I have had for many years. It is uncertain where I got this recipe from, since I have it written down on a scrap of paper and have changed the ingredients over the years. I guess you can call it a new recipe.
For this recipe I find it best to use organic peanut butter and chunky strawberry jam. There is something about the texture that makes this pancake.
Peanut Butter and Jam Pancakes for Toddlers (PB&J) Recipe
Ingredients:
1 1/3 cups flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
1 1/4 milk
1 egg
3 tablespoons melted butter
1 tablespoon organic peanut butter
1 tablespoon chunky strawberry jam
Directions:
Mix up all ingredients besides the peanut butter and jam, until well mixed. Gently stir in the tablespoons of peanut butter and jam as you do not want them to mix well.
on a medium to low heat have some oil in your pan and spoon the batter one heaped tablespoon at a time to cook. I fit 3 at a time. Flip when one side is cooked. Once cooled enough serve to toddler as is.
